Lemon Ginger Bars

Crust:

cups all-purpose flour
1
cup butter
½
cup powdered sugar

Filling

4
eggs, beaten
2
cups sugar
4
tablespoons flour
½
teaspoon baking powder
6
tablespoons lemon juice
zest of one lemon
6 - 7
rounds minced Stem Ginger

To make crust: Heat oven to 350-degree. Blend flour, butter and powdered sugar like pie crust. Pat into 9 X 13 pan. Bake for 20 minutes.

To make filling: Combine eggs, sugar, flour, baking powder, lemon juice, lemon zest and ginger until well mixed. Pour over baked crust. Return to oven for 25 minutes.

Allow to cool before cutting into desired sizes. Dust with powdered sugar.
